Lentil Soup is a soup based on lentils,it maybe vegetarian or include meat,and may use Red,Brown,yellow or black lentil with or without the husk ,yellow and red lentils disintegrate in cooking,make a thick soup.Lentil soup may include vegetable such as  carrot,Potato,Celery,Tomato,Parsley ripe plantain  and onion.common flavor garlic,onion,bay leaf ,cumin and olive oil.Indian Lentil soup are contains a variety of aromatic spices .In Middle East the edition of lemon juice gives a pungent tangs and cuts heaviness of the dish. In Egypt the soup is commonly pureed before serving and is traditionally consumed in winter.

Lentil soup is recognized as highly nutritious, a good source of Protein,dietary fiber,iron and potassium,Hippocrates prescribed lentil for patients with liver ailments.

Serves -1

Course-Soup

Ingredients 

  • 80 g -dry yellow lentils
  • 30 g -fresh tomatoes
  • 20 g- Potatoes
  • 5 g -garlic
  • 20 g-carrots
  • 60 cl- chicken stock
  • 30 g- Onion
  • 1 g -pepper
  • 3g -salt
  • 5 g- cumin powder
  • Lemon wedges and Bread croutons for serving

Method 

  1. Peel all the vegetables and was them
  2. Wash the lentils several times very well and drain
  3. Saute all vegetables and garlic in a deep pan with vegetable oil
  4. add lentils and mix all ingredients together
  5. after 5 minutes add hot chicken stock and keep simmering
  6. when the vegetable are very soft strain them
  7. Pour all components into a blender
  8. Stir in Cumin powder salt and pepper

Lentil soup is different between Indian style and Middle Eastern style Indian style only use of onion and garlic and Turmeric powder,Carrot but when you going for Middle Eastern style have to use celery and tomatoes but both are tasty and  healthy.
